Hanukkah has always been one of my favorite food holiday’s.

It is all about getting together with family and passing down tradition to the next generation.  In my family, it is all about food and producing the perfect potato pancakes. In the past, most years I have celebrated Hanukkah with my children.  Due to COVID19, December 2020 was the first year that I celebrated this wonderful holiday solo. Always looking on the brighter side, this gave me an opportunity to reinvent my recipe for future family gatherings and enjoyment.   I am so pleased with the taste and texture of my new and improved Potato Pancakes.  I hope you enjoy them, as much as I did. Amelia’s Amazing Thanksgiving Cranberry Sauce

When I think of Thanksgiving what comes to mind is turkey. sweet potato pie, sausage stuffing and most of all cranberry sauce. Since 1672, Cranberries have been a staple in our Thanksgiving holiday celebration.   The earliest  account of the process of making  sauce was  using whole raw cranberries and sugar, bringing it to a boil and then simmer until all the cranberries were cooked.   The Wampanoag Indian tribe had been using cranberries for food, dye, and medicine.   Amelia’s Amazing Thanksgiving Cranberry Sauce Ingredients: 2 Bags of Cranberries rinse well 1 Cup of Orange Juice 1 Cup of Water(enough to cover all the cranberries) 1 Cup of Sugar(white sugar or organic sugar) 2 Oranges (peeled and cut into large pieces) 2 Apples (granny smith, gala cut in chunk pieces) 1 teaspoon of Nutmeg 1Tablespoon of Cinnamon  Cooking Process: Place into midsize saucepot: Cranberries Add Orange juice and Water Add 1 Cup of Sugar Oranges and Apples Nutmeg and Cinnamon Bring all ingredients to a bo

Amelia's Delicious Tomato and Red Onion Basil Salad

I can hardly  believe that July 4th has come and gone. Finally, after many months of self-quarantine due to COVID19, I was able to visit friends.   With the compliance  of social distancing  at a good friend's home, I was able to spend July 4th as the grill master for the day. We spent the whole time outside in the backyard.    It was fun.   Along with barbecuing hamburgers, hot dogs, we had chicken and deliciously seasoned steaks.   My contribution to the meal was  Tomato Red Onion and Fresh Parsley and Basil.  This festive salad was a staples in my home during the years I raising my children.   It gave me great pleasure to share this wonderful recipe, fresh clean ingredients along with great taste. In my early 20’s my foodie journey began. I moved back to New York and started to work for a high end private school’s kitchen.   It was here that I learned how to cook from the head chef who years later I married.  The kitchen we cooked in was a small commercial galley kitchen.   With a stove, convection oven and commercial size mixer we cooked for over 500 students and faculty every day.  The head chef taught me everything I know about cooking. I learned about different cuisines and how to combine herbs and spices. One of the spices that we used often was curry.  Even to this day, the recipe that stands out is Curry Chicken Salad.  Curry powder is native to South Asian cuisines. It was popularized in the 19th and 20th century in other parts of the world due to its mass exportation as a condiment after it was discovered by colonial visitors. Amelia's Tasty Tabbouleh Salad

Since young adulthood, I have always loved to cook.   I find it to be a great creative outlet,mentally  stimulating , as well a way to lessen the financial burden and stay healthy.   Since COVID19, it has changed my whole outlook on food.   Food shopping and food prep  has become a major part of my life.  Sunday is   the day I do all my cooking for the week.     With music playing in the background, I create the masterpieces of the week.   This week one of the recipes I created is Tabbouleh Salad.  Since I  prefer gluten free, I am substituting the Bulgar wheat  with gluten free quinoa.   About the origin of Tabbouleh Salad                                           Tabbouleh is traditionally Middle Eastern and served as a side dish.
